Monday nights are typically slow at work so i experimented with spherification. I got it to work but the pearls remained solid instead of a solid outer layer with a liquid interior. Perhaps they were too small? Has anyone done this before? have any ideas? I want to make a pearl that will burst with liquid when you break the skin.
these are iced tea flavor and a few coconut water ones too.
